The Chabichou is a cheese made exclusively in the Poitou-Charentes region and it acquired its AOC status* in 1990. It is a very white and smooth cheese, and flexible to the palate, with a fine odor. This kind of cheese is best appreciated with a white wine such as Sauvignon Blanc, particularly one from the same region. An older Chabichou might be better with a red wine, an aperitif or a Pineau des Charentes.
